- ¼ cup (50g) granulated sugar
- 1 large egg
- 1 tablespoon cold milk
- Pinch of salt
- 1 cup (240ml) whole milk
- 2 egg yolks
- ¼ cup (50g) sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- 500g fresh strawberries
- 2 tablespoons apricot jam
- 1 tablespoon warm water
Instructions
- Mix flour, sugar, and salt. Rub in cold butter until crumbly.
- Add egg and milk. Form dough and chill 30 minutes.
- Roll dough, press into tart pan, and prick with fork.
- Bake at 180°C (350°F) for 20–25 minutes until golden. Cool completely.
- Heat milk. Whisk egg yolks, sugar, and cornstarch separately.
- Combine mixtures and cook until thick, stirring constantly.
- Add butter and vanilla. Cool with plastic wrap touching surface.
- Spread cream into crust. Arrange sliced strawberries on top.
- Mix jam with water, brush over strawberries, and chill 1 hour before serving.

Use ripe, fragrant strawberries for best flavor. Chill tart before slicing for clean cuts. You can prepare crust and cream one day ahead and assemble before serving. Store refrigerated up to 3 days.
