  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon milk
  • 1 1/2 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 cup olive oil
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil

Instructions

  1. Pound the chicken breasts to even thickness and season with salt and pepper.
  2. Prepare three bowls: flour, whisked eggs with milk, and breadcrumbs mixed with Parmesan and spices.
  3. Dredge chicken in flour, dip in egg mixture, then coat in breadcrumb mixture.
  4. Let breaded chicken rest for 10 minutes.
  5. Heat olive oil in a skillet and fry chicken until golden brown on both sides.
  6. Preheat oven to 400°F (200°C).
  7. Place chicken in baking dish, top with marinara sauce and mozzarella.
  8. Bake for 15–20 minutes until cheese is melted and bubbly.
  9. Garnish with fresh basil and serve warm.

Notes

For extra crispiness, use panko breadcrumbs. Prepare the chicken ahead and bake just before serving. Store leftovers in the refrigerator for up to 3 days and reheat in the oven to maintain texture.
