Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 boneless skinless chicken breasts (500g)
  • 8 cups (2 liters) chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 ½ cups egg noodles
  • 2 tablespoons fresh parsley, chopped
  • Juice of half a lemon

Instructions

  1. Heat olive oil and sauté onion, carrots, and celery for 5–7 minutes.
  2. Add garlic and cook 1 minute.
  3. Add chicken, broth, salt, pepper, thyme, and bay leaf.
  4. Bring to a gentle boil, then simmer 20–25 minutes.
  5. Remove chicken, shred, and return to pot.
  6. Add egg noodles and cook 8–10 minutes.
  7. Stir in parsley and lemon juice.
  8. Serve hot and enjoy.

Notes

For best texture, cook noodles separately if planning to store leftovers. Adjust salt after simmering. Freeze soup without noodles for up to 3 months.
