- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 2 boneless skinless chicken breasts (500g)
- 8 cups (2 liters) chicken broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 ½ cups egg noodles
- 2 tablespoons fresh parsley, chopped
- Juice of half a lemon
Instructions
- Heat olive oil and sauté onion, carrots, and celery for 5–7 minutes.
- Add garlic and cook 1 minute.
- Add chicken, broth, salt, pepper, thyme, and bay leaf.
- Bring to a gentle boil, then simmer 20–25 minutes.
- Remove chicken, shred, and return to pot.
- Add egg noodles and cook 8–10 minutes.
- Stir in parsley and lemon juice.
- Serve hot and enjoy.
Notes
For best texture, cook noodles separately if planning to store leftovers. Adjust salt after simmering. Freeze soup without noodles for up to 3 months.
