  • 2 cups (200g) graham cracker crumbs
  • ½ cup (115g) melted unsalted butter
  • 2 tablespoons sugar
  • 900g (32 oz) full-fat cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) sour cream
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 160°C (325°F).
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into springform pan.
  3. Bake crust 10 minutes and cool slightly.
  4. Beat cream cheese until smooth.
  5. Add sugar, sour cream, vanilla, lemon juice, and flour. Mix gently.
  6. Add eggs one at a time, mixing slowly.
  7. Pour filling over crust.
  8. Bake in water bath for 55–65 minutes until center slightly jiggles.
  9. Cool in oven 1 hour, then refrigerate at least 4 hours.
