Description

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup plain yogurt or sour cream
  • 2 teaspoons vanilla extract
  • 1 1/2 cups fresh blueberries
  • 2 tablespoons sugar (optional topping)
  • 1 tablespoon melted butter (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin pan with liners.
  2. In a bowl whisk flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl mix melted butter, eggs, milk, yogurt, and vanilla.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fold in blueberries carefully.
  6. Fill muffin cups about 3/4 full with batter.
  7. Brush tops with melted butter and sprinkle sugar if desired.
  8. Bake for 18–22 minutes until golden and cooked through.
  9. Allow muffins to cool slightly before serving.

Notes

Use fresh blueberries for best flavor. Toss blueberries in a little flour before adding to prevent sinking. Muffins can be frozen for up to 3 months.
