- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons tomato paste
- 1 can crushed tomatoes (14 oz)
- 1 can diced tomatoes (14 oz)
- 1 cup beef broth
- 1 can kidney beans, drained
- 1 can black beans, drained
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot and brown the ground beef.
- Add onion, garlic, and bell peppers. Cook until soft.
- Stir in tomato paste and spices. Cook for 2 minutes.
- Add crushed tomatoes, diced tomatoes, and beef broth.
- Simmer uncovered for 35–45 minutes.
- Add beans and cook 15 minutes more.
- Taste, adjust seasoning, and serve hot.
Notes
Chili tastes better the next day as flavors deepen. Store in the refrigerator for up to 4 days or freeze for up to 3 months. Adjust spice level by increasing or reducing cayenne pepper.
