Ingredients
- 400 g pasta
- 1 bunch asparagus, trimmed and cut
- 250 g mushrooms, sliced
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 200 ml heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 1/2 cup reserved pasta water
Instructions
- Cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain.
- Heat olive oil in a large skillet over medium heat and sauté the onion until soft.
- Add the garlic and cook for 1 minute until fragrant.
- Add the sliced mushrooms and cook until golden brown.
- Stir in the asparagus and cook until tender-crisp.
- Pour in the heavy cream and simmer gently for 2–3 minutes.
- Add Parmesan cheese, salt, pepper, and red pepper flakes, stirring until smooth.
- Add the cooked pasta and toss well, adding reserved pasta water if needed.
- Finish with lemon zest and fresh parsley. Serve warm with extra Parmesan.
Notes
For a lighter version, substitute heavy cream with half-and-half. Add grilled chicken or shrimp for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of milk or cream.
