Ingredients

  • 400 g pasta
  • 1 bunch asparagus, trimmed and cut
  • 250 g mushrooms, sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200 ml heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup reserved pasta water

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain.
  2. Heat olive oil in a large skillet over medium heat and sauté the onion until soft.
  3. Add the garlic and cook for 1 minute until fragrant.
  4. Add the sliced mushrooms and cook until golden brown.
  5. Stir in the asparagus and cook until tender-crisp.
  6. Pour in the heavy cream and simmer gently for 2–3 minutes.
  7. Add Parmesan cheese, salt, pepper, and red pepper flakes, stirring until smooth.
  8. Add the cooked pasta and toss well, adding reserved pasta water if needed.
  9. Finish with lemon zest and fresh parsley. Serve warm with extra Parmesan.

Notes

For a lighter version, substitute heavy cream with half-and-half. Add grilled chicken or shrimp for extra protein. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently with a splash of milk or cream.
