- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) black beans, drained
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 1/2 cups beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion until soft.
- Add garlic and cook for 1 minute.
- Brown ground beef thoroughly.
- Add bell peppers and cook 3–4 minutes.
- Stir in spices and tomato paste.
- Add crushed tomatoes, beef broth, and beans.
- Bring to a boil, then reduce heat.
- Simmer 35–45 minutes, stirring occasionally.
- Adjust seasoning and serve warm.
Notes
Simmer longer for deeper flavor. Add a small square of dark chocolate for richness. Store in the refrigerator up to 4 days or freeze up to 3 months. Reheat gently on the stovetop.
