Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce
- 2 large eggs
- 1/2 cup all-purpose flour
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Pound chicken breasts to even thickness.
- Set up breading station with flour, beaten eggs, and breadcrumb mixture with Parmesan and seasonings.
- Coat each chicken breast in flour, dip in eggs, then press into breadcrumbs.
- Place on baking sheet and drizzle lightly with olive oil.
- Bake for 20 minutes until golden and cooked through.
- Top each piece with marinara sauce and mozzarella cheese.
- Return to oven and bake 10 more minutes until cheese melts and bubbles.
- Rest for 5 minutes, garnish with fresh basil, and serve.
Notes
For extra crispiness, use panko breadcrumbs. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crisp texture. Serve with pasta, salad, or roasted vegetables.
