Description
Authentic French Ratatouille is a rustic Provençal vegetable stew made with eggplant, zucchini, bell peppers, tomatoes, and fresh herbs slowly simmered in olive oil. Healthy, vibrant, and full of Mediterranean flavor.
Ingredients

- 1 large eggplant, diced
- 2 medium zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 4 ripe tomatoes, chopped
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 tsp thyme
- 1 tsp oregano
- 1 bay leaf
- Salt and pepper
- 2 tbsp fresh basil
Instructions
- Salt eggplant and rest 20 minutes.
- Sauté onion and garlic.
- Cook eggplant separately.
- Cook zucchini and peppers separately.
- Add tomatoes and herbs.
- Simmer 30–35 minutes.
- Finish with basil and serve.
Notes
Cook vegetables separately for best flavor. Tastes better next day. Store 4 days refrigerated.
