Description

Authentic French Ratatouille is a rustic Provençal vegetable stew made with eggplant, zucchini, bell peppers, tomatoes, and fresh herbs slowly simmered in olive oil. Healthy, vibrant, and full of Mediterranean flavor.


Ingredients

Scale
  • 1 large eggplant, diced
  • 2 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 4 ripe tomatoes, chopped
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 bay leaf
  • Salt and pepper
  • 2 tbsp fresh basil

Instructions

  1. Salt eggplant and rest 20 minutes.
  2. Sauté onion and garlic.
  3. Cook eggplant separately.
  4. Cook zucchini and peppers separately.
  5. Add tomatoes and herbs.
  6. Simmer 30–35 minutes.
  7. Finish with basil and serve.

Notes

Cook vegetables separately for best flavor. Tastes better next day. Store 4 days refrigerated.
